WHAT YOU WILL LEARN

Multiply Workshop (Intermediate) : Cheese Scone Baking and Profitability


Objective:


Participants will learn the art of baking cheese scones and gain insights into the profitability of selling them in the context of an afternoon tea scenario. The workshop will also cover ingredient quantities for effective production.


Duration: 2 hours


Introduction (15 minutes):

  • Briefly introduce the workshop focus: cheese scones for afternoon tea.
  • Discuss the popularity of scones and their role in afternoon tea culture.
  • Highlight the importance of understanding costs and profits in a baking business.

Activity 1: Baking Cheese Scones (45 minutes):

  • Provide a demonstration on making cheese scones, emphasizing key techniques and ingredients.
  • Distribute recipe cards and ingredients for participants to follow along.
  • Allow hands-on baking, providing guidance as needed.

Break (15 minutes):

  • Participants can enjoy the freshly baked cheese scones.

Activity 2: Cost Analysis and Pricing (30 minutes):

  • Discuss the costs associated with baking the cheese scones, including ingredients, energy, and labor.
  • Introduce the concept of pricing strategies and the importance of covering costs while ensuring profitability.
  • Guide participants in calculating the selling price per scone based on cost analysis.

Activity 3: Scaling for an Afternoon Tea Scenario (30 minutes):

  • Discuss the scenario of catering for an afternoon tea event.
  • Guide participants in calculating the quantity of ingredients needed based on the number of guests.
  • Emphasize the importance of efficiency in production for larger quantities.

Activity 4: Mock Afternoon Tea Setup (30 minutes):

  • Participants organize a mock afternoon tea setup using the scones they baked.
  • Discuss presentation, portion control, and customer satisfaction.
  • Encourage participants to consider factors that contribute to a successful afternoon tea service.

Conclusion and Discussion (15 minutes):

  • Reflect on the profitability calculations and scaling strategies discussed.
  • Share insights from the mock afternoon tea setup and discuss participants' experiences.
  • Summarise key learnings, including cost analysis, pricing strategies, and efficient scaling for production.

COURSE REQUIREMENTS

All of these courses are funded through multiply so will need to stipulate that you need to be eligible for courses. You must be aged 19+ , No Maths Level C , 3 years in the country ( Exceptions : Afghanistan and Ukraine )
